Charcuterie is the branch of cooking devoted to prepared meat products such as bacon, ham, sausage, terrines, galantines, pâtés, and confit, primarily from pork. Originally intended as a way to preserve meats before the advent of refrigeration, they are prepared today for their flavors derived from the preservation processes.
We slice a wide variety of both Molinari and Columbus product (both produced in San Francisco) including numerous salamis, sopressata, pancetta, and capicolla (sweet and hot) all sliced to order. Moving on to the Piller Brand (Canadian), you will find Hungarian, Old Forest, Gypsy, and Pepperseed salami. Imported from Spain, Jamon Serrano is sliced any way see fit, along with Palacios chorizo and lomo (dry spanish pork loin). Imported Parma Ham, Mortadella w/ Pistachio, Bresaola (dry-cured beef) as well as Itailian Speck (a smokier relative to parma) is also sliced to perfection. If you prefer slicing an appetizer for a party tray on your own, a wide variety of smaller cured meats awaits you. Such product includes summer sausage/beef salami produced by Usinger's (Wisconnsin) and Vermont Smoke & Cure; salamis and sliced prosciutto by Busseto; Daniele Sopressata; and additional product from both Molinari and Columbus are available. Also great for party trays, you will find Calabro prosciutto wrapped with mozzarella.
